Food Hygiene and Safety

Our fully revised and updated 3½ hour food safety workshop will equip your staff with essential knowledge and skills. This elementary course introduces food safety concepts in an easy to understand, practical approach. This program is customised for your organisation's specific needs.

What is covered in the Food Hygiene and Safety course?

  • Requirements of the food safety program in section 3.2.1 of the Food Standards Code including:
    • Identification of food safety hazards
    • Monitoring and record keeping
  • Requirements of the food safety practices in section 3.2.2 of the Food Standards Code such as
    • Contamination and prevention of illness
    • Temperature control
    • Preparing and presenting food
    • Spoilage and preservation

Understanding ISO 22000:2005

An ISO 22000 based food safety management system can help you manage food and beverage related risks and demonstrate compliance with food regulations. Our introductory course is suitable for anyone developing, implementing and managing a Food Safety Management System based on ISO 22000. This standard defines the requirements of a management system covering all organisations in the food chain from “farm to fork.”

ISO 22000 combines generally recognised key elements to ensure food safety along the food chain, including:

  • Interactive communication
  • Management system, eg policy and objectives
  • Control of food safety hazards through pre-requisite programs and HACCP plans
  • Continual improvement and updating of the food safety management system

Who is it relevant to?

The course will benefit those who are need to understand the requirements of ISO2200 or are planning to complete other FSMS training such as internal auditing or the Lead Auditor training course, as it provides a strong basis of knowledge and understanding of ISO 22000 upon which to build auditing skills. This course is particularly suited to organisations that are commencing the implementation or redesign of their FSMS. It can be tailored to the context of your organisation, involving all interested people, and contributes significantly to the implementation of your system.

Participants are not expected to possess knowledge of management systems or ISO 22000 before attending the course.

Regulatory Food Safety Auditor – accredited

Gain a practical understanding of the practices required to plan, organise, conduct, lead and follow-up an effective regulatory food safety audit in accordance with the State and Commonwealth legislation. This intensive training course will benefit Environmental Health Officers and other industry participants from areas including aged care, food service, manufacturing & certification providers.

Our 5 day comprehensive workshop provides participants with a strong and practical understanding of the management systems necessary to produce food in compliance with HACCP Codex Alimentarius. Gain core knowledge and skills in planning and conducting food safety audits and following up on audit findings. This program will benefit those wishing to become a skilled food safety auditor, either within their organisation or conducting external audits of suppliers or subcontractors for compliance requirements.

This one day introductory course provides participants with a solid appreciation of HACCP and the General Principles of Food Hygiene necessary to produce safe food. This course will benefit those who are involved in developing and implementing a HACCP based food safety system. It is ideal for employees who are members of the HACCP team
